Creamy Potato Salad

I had been trying various salad recipes with slight variations. Most of them are a success but this one tastes awesome and has been my hubby's favorite up till now so thought of sharing it with you. Its quick, easy and yummy. Do give it a try!

Ingredients:

2 medium sized potatoes boiled and cubed
1 small onion finely cubed
1 small cucumber finely cubed
1 hard boiled egg finely cubed
Mayonnaise                              1/2 cup
Thick yogurt                             1/4 cup
salt                                           1/4 tsp + 1/4 tsp
black pepper powder               1/2 tsp
ground cumin powder               1/4 tsp
Red Chilli Flakes                      1/4 tsp
Red Chilli Powder                    1/4 tsp
castor sugar                             1/2 tsp
Lemon Juice                            1 tbsp
dhania (parsley)  for garnishing

Recipe:

Boil the potatoes until tender. Peel and cut them in 1/2 inch cubes. Sprinkle with 1/4 tsp salt, red chilli flakes and lemon juice. Mix well and place in refrigerator to cool.

Now take a bowl and mix mayonnaise, yogurt and all the spices. Beat well with a fork so that it gets mixed up. Now add this mayonnaise mixture to the potatoes. Now add rest of the ingredients including cucumber, onion and egg. Mix them all carefully with a spoon so that the potatoes dont break up. Now garnish with parsley and serve.

Note: For added taste, you can also add boiled, shredded chicken to the salad.
